Head Chef

Job description / Role

The candidate should have professional kitchen apprenticeship and previous experience in high end international cuisines. Ideally the candidate should be able to produce a wide range of menu consisting of main course, savoury meals such as salad, sandwiches or light main courses to homemade quiches.

Job Description:
- Creating a international menu including main course, breakfast menu, cold and hot items
- Create and innovate list of pastries and bakery items
- Creating a suitable packaging procedure for items to be sold for retail
- Developing a suppliers list for all items required in the kitchen
- Developing and training the kitchen team in accordance to the brand standard operating procedures
- Assist in the recruitment and hire staff including cooks and other Kitchen workers
- Scheduling rotas and establishing performance measures
- Ensuring food costing standards are met and wastage is kept within the industry limit
- Conducting inventory spot checks including monthly stock taking
- Establishing recipes and methodology cards for each item on the menu
- Ensure highest standards of hygiene are met
- Participate in creative thinking for ongoing menu development
- Be a leader and team player

Requirements

- Has a relevant and extensive experience to International Cuisines
- Has previous experience in baking and pastry shop
- Advance understanding of Professional cooking and Kitchen skills.
- Degree in Hospitality Management
- Knowledge of Food Safety and HACCP
- Knowledge of supplies, equipment and services, ordering and inventory control
- Must be willing to work in Al Reem Island Abu Dhabi
