Job description / Role

Employment: Full Time

Independent restaurant experience within the GCC, with a focus on fresh, modern styles, flavours and presentations is required, together with a high level of technical ability, creative flair and an understanding of current and developing food trends.

- Manage the food direction of the restaurant in line with the strategy agreed by the management team.
- Ensure the restaurant provides a market leading food offer for all markets in which it operates. The food menus will be innovative, exciting for both customers and employees, and profitable in line with the Company expectations and budgets.
- Source ingredients and products for the restaurant which are suitable for SBU needs and are business viable.
- Develop recipes for main and promotional menus in accordance with quarterly business calendar and within expected timescales set by the management team.
- Ensure all recipe training documents are produced to the restaurant standard and are accurate.
- Conduct regular operational audits including line checks, and hygiene checks.
- To monitor the stock control and storage procedures within SBUs and department.
- Manage supplier relationships; monitor and forecast international orders.
- Ensure all equipment is working to the standard required by the business, and if issues are found that they are reported and actioned.
- Ensure competitor analysis is carried out on a regular basis for the local market.
- Provide input on future kitchen equipment needs and possess current knowledge of the local and international operational equipment market.
- Assist in the development and implementation of training systems, calendars and plans.
- Is responsible for the performance and welfare of the Chefs, conducting performance appraisals and implementing performance management plans as required.
- Support the recruitment function and be part of any confirmation process for new hires.

This role requires someone who is an inspirational communicator who can create belief in individuals as well as being able to articulate the businesses visions and how their team becomes part of the bigger picture. This person should be able to uplift and empower their people.

Requirements

We are seeking a dynamic Head Chef to lead our established restaurant to the next stage of excitement and expertise. This position would suit a Chef with 3-4 years of leadership experience; either as a Head Chef or a Sous Chef ready move to the next level.

Leading a brigade of 8, the right candidate will be creative, hands-on and will build the team to drive the business to a high standard.
