Job description / Role

Employment: Full Time

This position is responsible for the entire food production for food units and restaurant outlets as well as food preparation for the delivery to patients within HMC. Develops menus and food concepts for patients, visitor and staff; establishes food purchase specification and recipes. Responsible to maintain highest food quality including sanitation and hygiene standards.

Principal Accountabilities:
- Demonstrate knowledge and application of HMC Mission, Vision, and Values.
- Creates, develops and tests recipes and techniques for food preparation and presentation for all food operations with HMC (patient, visitors and staff) based on high level cuisine in hotels and restaurants. This includes storing and handling to ensure consistent high quality and to regulate wastage and food cost.
- Coordinate with the Service Unit and Dietetics staff in planning the menu, food service arrangements and other related details.
- Prepare work schedule of production personnel and assign duties, responsibilities and work stations to kitchen personnel in accordance with work requirements.
- Monitor and evaluate kitchen personnel and work procedures in order to ensure conformance with HMC standard of food production.
- Ensure that food is produced on time following established daily meal schedules and monitor tray line service.
- Forecast supply requirements based on approved quantities in the food tender.
- Forecast staff and equipment requirements based on approved set menus and a la carte menu.
- Maintain records and statistics and prepare and submit reports as required.
- Prepare and control budget and production levels to ensure general cost effectiveness of the food production unit.
- Control expenses within area of responsibility including manpower and overtime of outsourced staff members.
- Prepares necessary data for the budget in the area of responsibility; projects annual food and labor cost and monitor actual production result.
- Take corrective action where necessary to help ensure the departmental goals are met.
- Inspect supplies, equipment, and work areas in order to ensure efficient service and conformance to HMC standards.
- Coordinates and assists in the preparation and regular testing of approved standardized recipes.
- Attend to customer complaints regarding quality of food.
- Conduct on the job training for kitchen personnel in food preparation, sanitation, and safety procedures
- In coordination with the Director of Catering and Corporate Office select personnel for transfer, promotion, and special training to ensure most effective utilization of individual skills and staff development.
- Ensure that Performance Appraisal system is implemented and adhered according to company policy.
- Encourage and nurture employee creativity and innovation within the HMC guidelines.
- Comply with HMC policies and procedures and in particular Infection Control, Safety and Quality Management.
- Can work in shifts to ensure a 24 hrs and 7 days a week service including weekends and holidays.
- Perform other duties as requested.

Requirements

Education:
- Minimum: A 2 year diploma after high school in food preparation from a reputable culinary school, city and guild school, training institute, or hotel.
- Preferred: Culinary Diploma/ Degree of an international recognized institute

Experience:
- Minimum: Out of 8 years working experience in the food industry a minimum of 5 years experience as an Executive Chef or equivalent in a 5* star Hotel Group / Catering Facility / Cruise Line and 4 years working experience in an operation with large quantity of food preparation per day.
- Preferred: Additional working experience in Middle East and Asia.

- Language Skills: Fluent in Business English (written and spoken) and preferred one more language
- Computer Skills: Advanced Computer skills, Able to create and modify Excel Spreadsheets, compile PowerPoint presentations, proficient in the use of the basic Microsoft Programs.
