Job description / Role

Employment: Full Time

Our company is bidding on a United Nations Catering proposal in Afghanistan and seeks candidates who would be interested in this opportunity.

The Chef is primarily responsible for the preparation and service of food in a DFAC. The Chef will prepare all types of food according to standard and dietetic recipes, as well as ordering and inspecting food supplies and preparing meats for cooking.

Responsibilities include the following:
*Performs preliminary food preparation procedures. *Prepares and/or cooks menu items listed on the production schedule.
*Bakes, fries, braises, boils, simmers, steams and sauté's as prescribed by meal plan
*Sets up serving lines, garnishes food items, and applies food protection and sanitation measures in field and garrison environments.
*Receives and stores subsistence items.
*Performs general housekeeping duties.
*Operates, maintains, and cleans field kitchen equipment.
*Provides technical guidance to lower grade personnel the kitchen operations.
*Ensures that proper procedures, temperatures, and time periods are adhered to during food preparation. *Directs safety, security, and fire prevention procedures.
*Performs limited supervisory and inspection functions including shift supervision.

•Self-assured and calm manner towards staff and client
•Pleasant and polite manner, well-groomed appearance
•Cost and quality awareness
•Food production experience and back ground
•Knowledge and understanding of cost control and wastage plan
•Ability to make decisions under pressure and other items that supersede the identified priorities
•Works independently with minimal supervision
•Ability to deal patiently and tactfully with people of different national and cultural backgrounds
•Highly efficient with excellent organizational and logical skills
•Knowledge in catering and kitchen management

Requirements

•Must have a Certificate in Catering. A higher Diploma would be an asset.
•Several years practical experience in similar role
•Experience in managing tasks under pressure in hostile environment
•Excellent English language skills - reading and writing
•Due to the location of this position, applicants must be physically fit
