The Role


The Role


Responsible to maintain Standard Service, Daily Menu, Safety and Hygiene of the Dining area. Direct work, be responsible for performance in each facility and to meet the specified performance standards. Shall be present at all times in the dining facility.

• Applies and follows the contractual obligations, GCC’s policies and procedures.
• Follow, imply and maintain all ISO standards and requirements.
• Establishes and maintains good client relationship.
• Responsible for the staff allocation in the respected areas of service
• Ensures high standards of service and cleanliness are maintained.
• Maintains strict staff disciplines and abides by the rules and procedures in service as per the clients / contractual requirements.
• Carries out regular inspection in the dining and surrounding areas.
• Monitors personal hygiene standards of all dining staff.
• Offers suggestions on innovative menus for menu planning with the coordination of executive chef.
• Conducts daily briefing, tool box talks, safety stand downs and hygiene meetings on site and ensures that all dining personnel strictly comply with established rules and regulations at all times.
• Constantly available to his staff to assist in any issues that may occur.
• Offers suggestion and / or plans for special functions.
• Can do attitude.
• Leading the team positively for the growth of the concern

• 3 years experience working in a large food service operation providing cafeteria style or multi-entree operation providing complete meal service (breakfast, lunch and dinner).

• One year must have been served as a Manager or an Assistant Manager.

• Military food service experience in the pay grade of E-7 or above may be credited as management experience for this position.

• Sanitation Certification - the candidates will have completed a formal course of study through, or equivalent to, at least one of the following:
1. Educational Foundation of the National Restaurant Association Course in Applied Food Service Sanitation.
2. U.S. Army Quartermaster Center and School Food Service Sanitation Certification Course.
3. Examination results from the Educational Testing Service (ETS) showing satisfactory completion of the Food Protection Certification Program
4. ServSafe, a Food Protection Management Certification, accredited by the American National Standards Institute and International Food Safety Council
5. A course of study that is offered from an accredited college or university approved by the Installation Medical Authority (other sanitation certificates may be accepted on a case-by-case basis)
