Job description / Role
Responsible for all food and beverage production and service for the group, develops, directs and manages all new projects / concepts, Directly manages the Executive Chefs & Restaurant Managers F&B outlets for the group. Involved in planning and implementing budgets, key player in recruiting and training, applies relevant marketing principles to assure that the wants and needs of business and guests are consistently exceeded.
Requirements
Develops and implements policies and procedures for the entire food and beverage department.
Develops, directs and manages all new projects phases, engineering (basic and detailed), procurement, fabrication, construction and commissioning / start-up.
Leads project teams and facilitates the communication and interaction among the functional representatives to track project against its schedule, budget and against phase gate review objectives, reporting status to the CEO and executive management on a needed basis.
Helps plan and approve the organizational chart, staffing and scheduling procedures and job description/specifications for all department staff.
Assures that all standard operating procedures for revenue and cost control are in place and consistently utilized
Assures that effective orientation and training for new staff and professional development activities for experienced staff are planned and implemented.
Inspects to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met.
Helps in planning external and internal marketing and sales promotion activities for the food and beverage department.
Monitors purchasing and receiving procedures for products and supplies to ensure proper quantity, quality and price for all purchases.
Reviews new techniques for food preparation and presentation in a manner and variety to maximize business and guest satisfaction and to minimize food costs.
