The RoleThe RoleThe multiple award-winning Banyan Tree Hotels & Resorts has been conceptualized as a “Sanctuary for the Senses” whose beautiful properties can be found in stunning locations such as the Seychelles, the Maldives, Bintan (Indonesia), Phuket (Thailand), Bangkok (Thailand), Ringha (China) and Lijiang (China). In partnership with the iconic and landmark development the Meydan Racecourse, Banyan Tree will be operating “The Meydan” Hotel consisting of 280 Suites, 5 spectacular restaurants, a signature Banyan Tree Spa and meeting facilities for up to 400 guests. Within the First phase of the recruitment process, we are looking for an experienced and qualified management team to lead this exciting project. Pastry Chef's Responsibilities: 1. Conducted daily briefings for bakery s and pastry. 2. Directs and controls all subordinate kitchen staff to ensure that all day to day operational matters are handled on time and guest expectations are met. 3. Co-ordinates with Food and Beverage in ensuring that all pastry & bakery aspects for banqueting and restaurant operations function efficiently and on time 4. Assists in the preparation of duty rosters, vacation planning and scheduling, and public holiday scheduling 5. Monitors the consistency of preparation and presentation in all food production areas to ensure that they conform to the requisite standards. 6. Liaises with purchasing and suppliers to ensure that all food items ordered are delivered, and are of the appropriate quality at the most competitive price 7. Conducts periodic checks of all food delivery and storage areas to ensure quality of food and standards of hygiene are maintained. 8. Assists in the preparation and implementation of the annual promotion plan and menu change cycle for all areas. 9. Supervises the set up of all buffets, tea/coffee breaks and food displays 10. Helps to ensure that an accurate and up-to-date recipe bank is maintained 11. Assists in menu planning as directed, and utilises sales analysis and menu engineering techniques accordingly 12. Assists in maintaining standards of hygiene and cleanliness in all kitchen and related areas 13. Assists in the controlling and monitoring of all kitchen expenses. |
RequirementsRequirements• Minimum 4 years experience in leading hotel operation with multiple outlets • With a high level banqueting experience and passion for training of service staff • Knowledge of current trends and will highly consider a new age chef • Specialized in Pastry items and Desserts • Has a Management skills especially with diverse teams • Operational knowledge of broader F & B function in a hotel required • Expertise in show pieces, chocolate, sugar and cakes • Artistic in nature • Pleasant, outgoing, self-motivated, confident and understands the need for results & quality focused to deliver an outstanding product • Can manage multiple task • Can handle and understand responsibility • Able to build strong relationship with guest, staff, colleagues and key suppliers |
