The Main Purpose of the role:

• To ensure the fresh products maintain the quality
• Ensure Critical Control point inspection is being adhered to
• Microbiological inspection of raw and finished products
• Finished product specifications as per customer requirements
• Issuing and monitoring of chemicals required for the production
The main areas of responsibility:
• Inspecting the chlorine and acidity levels in the wash tanks insuring that goods are being washed effectively with the required dosage of chemicals
• Making sure that the room temperature of the production area is within the required limits of 1 to 5 Celsius and that the product temperature is also within the required specifications
• Calibrating and continuous settings of the functionality of the metal detector as it is considered to be the last and final critical control point in the facility
• Preparation of media , culturing, proper incubation and performing plate counts (pour classic method)
• Reporting results with proper explanation of methodology used and a final conclusion
• Following up with local and international standards of microbiology
• SWAB analysis prior to start of production
• Online inspection of product cut size, which involves machine shredding, manual cutting and other machine operated cutting or dicing
• Packaging inspections and requirements which includes type of film used for sealing, labeling and gas flushing (if applicable)
• Shelf life analysis by testing retained samples on a daily basis
• Issuing of chemicals to the production and ensuring that proper dilution are being met during processing
• Communicating chemical consumption to the HSE Officer who is recording inventory
• Continuous check up of chemical dosage done by the pumps and manually by the QA crew
