Job description / Role
- Update constantly the system with revised price for food, dry goods and beverages;
- Evaluate food quality when delivered, check always expiring date for any food, keep receiving log always updated and correct as per Dubai Municipality, accordingly reject any food or beverage which not comply with DM approved delivery temperature.
- Receiving Manager will be authorized by the company to approve and allocate the required items with the supplier , in the same time he can revise or either cancel the quantity of requested goods.
- Ensure and work together with the food supplier in order to guarantee a stock of fast moving items always kept for our restaurant in stock.
- Check and confirm that purchase procedures are adhered to. Report and discuss deviations with management.
- Verify that standard purchase procedures are followed on a continuous basis.
- Verify the accuracy of entries of daily stock received and ensure all received items are recorded.
- Spot check on merchandise received daily according to invoices and specifications.
- Check storage practice periodically in regards to quantity, accuracy, orderliness, breakage and usage.
- Ensure all merchandise is stored properly and monitor security control.
- Take monthly inventories and preparing stock variance report.
- Randomly test the inventory (ABC) of storage/counter by reconciling the opening stock with the closing stock, taking account of counter issues and sales.
- Day end bar counter stock/cash reconciliation
- Verify daily outlet void control sheets and check approvals
- Cross check the costing for recipes and menus and control the recipe change and approval process.
- Scrutinize and control requisitions, usage and returns for special events.
- Record, review and control spoilage and breakage.
Requirements
- Experience: 5 years of experience in similar position preferably in 5 star hotel or reputable independent restaurant.
- UAE experience is required, in possession of basic hygiene training.
- PIC level 3, be aware of Dubai Municipality HACCP requirement.
Education:
The ideal candidates will have a bachelor's degree in hospitality or a related field.
Core competencies:
Attention to details, very good organizational skills, reasonable knowledge in accounting, hands on experience in Microsoft Office, Fidelio.
