Sous Chef

Job description / Role

We invite applications from experienced and qualified Sous Chefs.

The ideal candidate will be working closely with the Head Chef in managing and leading the brigade, leading by example and motivating.

You will be using high quality produce and must be an efficient and organised worker with excellent attention to detail, flexible to work across all sections of the kitchen as needed.

Previous Sous Chef experience is required as you will be expected to deputize in the absence of the Head Chef, maintaining profitability, health and hygiene and standards.

The role will be responsible working for a high-volume 4-star type restaurant/bar, which is part of our golf course.

The main account abilities of this role are:

- Direct the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables,
desserts, or other foods.

- Plan and price menu items, orders supplies, and keep records and accounts.

- Supervise and participate in cooking and baking and the preparation of foods.

- Write weekly schedules according to business and projected goals.

Requirements

The ideal candidate will have previously worked in a 4 star hotel in Dubai and have wide general experience in the catering industry, possessing knowledge, experience and ability in the following areas:

- Vegetarian and non-vegetarian cuisine
- Bread baking/pastry
- Seafood
- Buffet/banquet/special function/larder
- Ethnic/regional/theme cooking
- Cakes/sweets
- Basic nutrition and dietary cooking
- Stock control, computer (spreadsheet) experience
- Menu compilation

This is an urgent role and we are looking for someone who can start as soon as possible.

A valid UAE Driving license is also necessary.
