Head Baker

Job description / Role

The candidate should have professional kitchen apprenticeship and previous experience in gluten free baking and pastry making. Ideally the candidate should be able to produce a complete gluten free menu for an Artisan Bakery and Cafe.

The candidate pre-requisites to qualify must include but are not limited to:
- Creating a gluten free menu including baked, pastry, cold and hot items
- Creating a suitable packaging procedure for baked goods sold for retail
- Developing a suppliers list for gluten free ingredients and items
- Developing and training the kitchen team in accordance to the brand standard operating procedures
- Scheduling rotas and establishing performance measures
- Ensuring food costing standards are met and wastage is kept within the industry limit
- Conducting inventory spot checks including monthly stock taking
- Establishing recipes and methodology cards for each item on the menu
- Ensure highest standards of hygiene are met
- Participate in creative thinking for ongoing menu development

Requirements

- A degree or certificate in culinary specializing in desserts (gluten-free) items is an advantage
- Has relevant experience in similar concepts for a minimum of 3 years
- Creative and flexible when it comes to product innovation depending on the markets need
- Has a background in Hiring Kitchen staff and doing the Performance Appraisal
- Advance understanding of Professional Baking and Kitchen skills.
- Knowledge of Food Safety and HACCP
- Knowledge of supplies, equipment and services, ordering and inventory control
- Must be willing to work in Abu Dhabi
- Be a leader and team player
