Senior Executive Chef - Qatar Aircraft Catering Company - Qatar, Doha

Directs and supervises the food preparation of all meals forb all the Qatar Aircraft Catering Company ( QACC ) clients ensuring the highest level of quality and consistency as related to food handling, food quality and food presentation, at the highest hygiene and sanitation standards. Responsible for the direction, coordination, and evaluation of the department.

Accountabilities:

Strategic
- Follows all the latest trends in new technology in the food industry, sets the strategy, proposes and implements new ways of producing and maintaining food
- Keeps aware of trends, systems, practices, and equipment in F&B events
- provides insights and makes suggestions on issues related but not limited to, projected business, operations results and challenges in procedure, new management policies, quality improvements, sales improvements, productivity improvements.

Operational
- Supervises the function of all culinary staff, facilities, inventories, and costs to ensure maximum departmental profit achieved
- Responsible for the delivery of a 5- star food and beverage offer in line with QACC brand equity and standards to ensure consistent service levels and excellence are achieved and maintained
- Responsible for on time production for all meals being served to clients, for approximately 8 airline carriers ( in future the number will increase to 40 airline carriers), providing different menus for each company ensuring full catering operation functioning on a 24/7 basis

Quality & Safety Standards
- Controls and analyses the quality of product and service, customer satisfaction, merchandising and menu development, operating costs and sanitation/ cleanliness in order to optimise the quality of levels of product and service
- Responsible for the maintenance of Quality Assurance , Health & Safety and food handling programs & standards
- Ensures that all kitchen area vis in clean and sanitary and is in compliance with all local laws

Budget
- Prepares necessary data for applicable parts of the budget; projects annual food, labor and other costs and monitors actual financial results; takes corrective action as necessary to help assure that financial goals are met

Requirements

- Essential Bachelor's degree or equivalent
- B.S Degree in Food Services Technology Management or A.A Degree in culinary arts
- Essential Executive Management Experience - minimum 10 years of job-related required
- 10 or more years experience in a multicultural environment
- 3 to 5 years of culinary management experience in contract food service , fine dining or restaurant with inventory and purchasing knowledge and control
- Preferred good knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation knowledge of P&L accountability and contract- managed service experience is desirable

Skills
- Ability to manage a multicultural team
- proficient computer skills, especially in Excel
- Ability to communicate on various levels to include management, customers, client, and associate
