Job Description

- Train and manage kitchen personnel and supervise/coordinate all related culinary activities.
- Estimate food consumption and requisition or purchase food.
- Select and develop recipes.
- Standardize production recipes to ensure consistent quality.
- Establish presentation technique and quality standards.
- Plan and price menus; ensure proper equipment operation/maintenance and ensure proper safety and sanitation in kitchen.
- Oversee special catering events, offer culinary instruction and demonstrate culinary techniques.
- To maintain exceptional standards of product and service delivery that is consistent with customer expectations.
- To maintain the smooth and profitable day to day running of the kitchens within hotel's food and beverage outlets.
- To research and circulate findings of all new food initiatives and trends, and to ensure that the hotel leads the market in terms of quality and new product innovation.
- Accountable for the generation and management of kitchen budgets
- To source and build relationships with all food and equipment suppliers, ensuring that the best produce is delivered to all kitchens with pricing that incorporates the scale of the business.
- To protect and maintain the assets of the kitchens.
- To implement and manage a strong waste management system, this will be underpinned by structured ordering and stock management systems
- To facilitate the recruitment and placement of all kitchen team members and to put structures in place to continuously develop and monitor the progress of the team
- Attends department meetings and summarizes performance.
- Highlights achievements, problems and challenges.
- Attends productivity reviews.
- Coordinates with outlet managers for daily events.
- Conduct/attends briefings.

Requirements

Qualifications

- Must be Saudi or Muqeem (with a Saudi Resident)
- Experience in the same field is a must, preferably in the Hotel industry
- Strong attention to detail, highly responsible, organized & reliable
- Strong interpersonal and problem solving abilities
- Ability to multi-task and work well under pressure
