Job description / Role

Employment: Full Time

- Creating a menu including small but rotating range of traditional Japanese desserts, coffee and cold drinks
- Create and innovate list of pastries - both Japanese and International influence
- Developing a suppliers list for all items required in the kitchen
- Developing and training the kitchen team in accordance to the brand standard operating procedures
- Assist in the recruitment and hire staff including cooks and other Kitchen workers
- Scheduling rotas and establishing performance measures
- Ensuring food costing standards are met and wastage is kept within the industry limit
- Conducting inventory spot checks including monthly stock taking
- Establishing recipes and methodology cards for each item on the menu
- Ensure highest standards of hygiene are met
- Participate in creative thinking for ongoing menu development

Requirements

The candidate will aim to capture the market seeking an exceptional taste and essence of small bites and desserts from Japanese and International influence.

The menu will consist of light dishes made from authentic recipes, using spices and herbs blended to perfection with a taste of home with a modern twist.

Five (5) years minimum experience as a Head Chef in similar field - Bakery Shop.

Preferably who had worked in Japanese Cuisine and the like.
