Job description / Role

The candidate will aim to capture the market seeking an exceptional taste and essence of small bites and desserts from Emirati cuisine. The menu will consist of light dishes made from authentic recipes, using local spices and herbs blended to perfection with a taste of home.

Preferably of Arabic origin that has experience with these recipes and cooking techniques. However, not a pre-requisite.

Job Description:
- Creating a Emirati menu including small but rotating range of traditional desserts, coffee and cold drinks
- Create and innovate list of Emirati pastries
- Developing a suppliers list for all items required in the kitchen
- Developing and training the kitchen team in accordance to the brand standard operating procedures
- Assist in the recruitment and hire staff including cooks and other Kitchen workers
- Scheduling rota’s and establishing performance measures
- Ensuring food costing standards are met and wastage is kept within the industry limit
- Conducting inventory spot checks including monthly stock taking
- Establishing recipes and methodology cards for each item on the menu
- Ensure highest standards of hygiene are met
- Participate in creative thinking for ongoing menu development

Requirements

The candidate pre-requisites to qualify must include but are not limited to:
- Has a relevant and extensive experience in Traditional concept that will serve breakfast, lunch and dinner, seven days a week with takeaway and a delivery options available
- Advance understanding of Professional cooking and Kitchen skills.
- Knowledge of Food Safety and HACCP
- Knowledge of supplies, equipment and services, ordering and inventory control
- Must be willing to work in Abu Dhabi, Danat Area
- Be a leader and team player
