Job description / Role

Employment: Full Time

To Manage and oversee the following:
- Daily operations
- Involved and on the floor during busy periods ensuring customer satisfaction
- Check and sign off on daily briefing sheets
- Ensure retail selection is up to date and relevant(no expirations)
- Daily checklist sign off as received from Asst Man or supervisor on duty
- Check and sign off on daily rotation sheet to display
- Staff Training ongoing as well as structure monthly during meeting
- Monthly staff meetings held with information shared and opinions received from team
- Updating of SOP and SOS as and when needed
- Responsible for the standards of service delivered by staff
- Ensure the levels of admin and structure is managed as per the F&B Policy in line with all Audits
- Weekly and monthly schedules to be done for FOH/BOH(as received from Chef) and comparing vs LD/PH sheets and file
- Ensure all sections is allocated daily to FOH staff
- Ensure that all Areas are inspected daily/weekly as per company standard with attention to detail – PIC Training to be done
- Ensure Hygiene standards are met daily as per DMCC/DM
- Ensure kitchen files are being filled in correctly and signed off accordingly daily
- Combine Wastage to weekly spreadsheet as per kitchen file
- Work with Pastries and Head Chef to ensure Pastry selection is updated regularly in variety and according to sales breakdown.
- Assist in Walk in Customer quotes for cakes, events or catering together with the Chef on the food side of the requests made
- Ensure proper catering file is maintained and updated with menu’s, photo’s and general catering information
- Assist in PR events and marketing where needed
- Financial controls on daily POS transactions, processes and filing
- Sign off and control of petty cash spends daily/weekly in controlling of costs and overspending due to bad stock control and ordering
- Cost Control and management daily. Actual stock vs stock ordering
- Financial Spreadsheet – oversee and manage the input of figures daily to ensure accuracy on the allocation of costs between column breakdowns
- Cross Check of LPO’s vs invoice received before monthly SOA’s are sent to F&B Manager for sign off
- Maintain good interaction between all of the team/staff
- Create a high level of moral with our team on all levels.
- Performance meetings held with team every 3 months.
- Catering BEO’s and event Forms/checklists filled in as per confirmed event, signed off with each event/catering done.

Requirements

- Bright, engaging Manager with excellent people skills
- Fluency in English Mandatory
- Experience in cafe culture
- A background in catering would be an advantage
- Numeracy, report writing skills
- HACCP
- Outstanding supervisory and development skills
- Employee engagement focussed
