Job description / Role

Employment: Full Time

The main purpose of this role is to Control Catering Service Standards on MELABS project in accordance with contract specifications and requirements. Ensure full compliance with Food and general HSQE requirements

Key Job Responsibilities:
- Allocate working tasks between the shift
- Ensure that food production is completed in line with daily menu cycles and in sufficient quantities to meet the projected client attendance numbers
- Responsible for the quality and quantity of all food production during the shift
- Ensure that sufficient rations are requested to meet the menu cycle requirements
- Ensure that the use of food rations and ingredients are in line with the appropriate validated recipes
- Continual development of catering staff to enhance existing skills and knowledge
- Ensure that correct portion control is adhered to at all times
- Assist head chef and catering services manager in creation of menu cycles, improvements to working practises
- Ensure that international standards of food hygiene and HACCP are followed at all times
- Ensure that all HACCP paperwork is completed in line with ISO standards and food safety plan requirements
- Minimise food wastage by correct use of HACCP controlled recovery procedures
- Meet contract key performance indicators including maintaining client satisfaction levels are 95% or above for catering services
- Ensure the security of all company and client owned assets, report any damages and losses
- Monitor pest control and take appropriate action in the case of detection
- Deputise for head chef in his absence on an as required basis

Requirements

- City & Guilds 706-1/2/3 or National equivalent
- Intermediate Food Hygiene (PIC 3) PIC 4 or above an advantage
- Good level of IT knowledge in word and excel ( experience of calc menu an advantage)
- Currently hold a valid Fit to Handle Food Certificate
- Strong verbal and written English language
- Minimum of 6 years catering experience of which 2 Years in a senior position controlling up to 22 staff
- Minimum of 2 years working in military or remote sites / austere locations
- Previous experience in 4* Hotel / Restaurant or Industrial catering for over 750 covers
- A minimum of 5 years experience of International Cuisine
- Menu Planning, Stock Control, Procurement Planning, Portion Control
- Knowledge of Health and Safety relating to catering operations
- Good working knowledge of HACCP
