Job description / Role
• Prepare and cook authentic Chinese dishes following traditional and modern techniques.
• Specialize in a designated section, such as Wok, Dim Sum, Roasting, or Cold Kitchen.
• Ensure dishes are prepared with precise seasoning, proper portioning, and high-quality presentation.
• Monitor the freshness and quality of ingredients to maintain consistency in flavor and texture.
• Possess extensive knowledge of Chinese sauces, marinades, and traditional cooking methods.
Kitchen Operations & Hygiene:
• Adhere to HACCP food safety and hygiene regulations.
• Maintain a clean, organized, and well-stocked workstation.
• Assist in receiving, storing, and managing kitchen supplies and ingredients.
• Ensure the proper handling and storage of perishable items, including meats, seafood, and vegetables.
Team Collaboration & Leadership:
• Work closely with the kitchen team to ensure seamless food preparation and service.
• Assist in training and mentoring junior kitchen staff to uphold culinary standards.
• Communicate effectively with the Sous Chef and Head Chef regarding kitchen needs and improvements.
Menu Development & Innovation:
• Contribute to the development of new Chinese dishes and menu items.
• Stay updated with emerging Chinese culinary trends and introduce creative ideas.
Requirements:
• Proven experience as a Chef de Partie in a reputable Chinese restaurant or hotel.
• Strong expertise in Chinese cooking techniques, particularly in Wok, Dim Sum, Roasting, or Cold Kitchen.
• Ability to work efficiently in a high-paced, high-volume kitchen environment.
• Excellent knife skills and deep knowledge of Chinese ingredients and seasonings.
• Basic understanding of food cost control and inventory management.
• Strong teamwork, communication, and problem-solving skills.
• Flexibility to work shifts, including weekends and holidays.
• Certification in Culinary Arts or a related field.
• Experience in a fine-dining or high-volume Chinese restaurant.
• Familiarity with regional Chinese cuisines such as Cantonese, Sichuan, or Hunan.
