Job description

Tasks and responsibilities

• Coordinate quality and food safety programs including HACCP
• Work closely with F&B / Operations Manager and chefs to ensure conformance to hotel standards
• Verify critical control point procedures and parameters for completion as per established food safety program
• Verify sanitation procedures through pre-operational inspection and microbial swab analysis
• Conduct monthly facility internal inspections/audits and act as main contact for third party audits
• Develop training schedule and provide training for all employees on good manufacturing practices, food safety and HACCP principles
• Verify process procedures to ensure compliance of finished product and raw materials to established specifications
• Perform raw ingredient and finished product evaluation to ensure compliance to current specifications
• Investigate quality concerns with customers and suppliers, resolve and follow up corrective measures
• Develop and update raw material specifications using supplier documentation and enforce quality standards
• Ordering of kitchen supplies as required
• Maintain a well organized kitchen environment
