Head Chef – Cold Kitchen – In-flight Catering - Service Provider – Saudi Arabia (Riyadh/Jeddah)

Our client is a market leader in delivering first class Catering Services across multiple industries, specialising in in-flight catering for the aviation sector. They are currently seeking a Head Chef Cold Kitchen to join their team in Saudi Arabia for positions in both Jeddah and Riyadh.

Department – Production

The Head Chef, Cold Kitchen - Will produce and pack cold meals and snacks according to customer's requirements within agreed production plan. Using the newest technologies.

Roles and Responsibilities:
• Requisition / Delivery check-up daily.
• Take part on International Food Fair to achieve the standard in newest food production style.
• Leadership, training gives to your Junior Sous Chef and senior supervisory level staff.
• Take care about machinery parts and renewal, repairing of equipment
• Weekly staff Hygiene Training briefs.
• Supervise and participate in daily production
• Daily production planning
• Daily requisitioning from Stores, Pre-preparation, Hot Kitchen and Bakery.
• Quality check-ups.
• Develop and implement recipes.
• Participate in raw material evaluations.
• Supervise and participate in preparation for food presentations.
• Scheduling and vacation plan.
• Communicate and hold regular meetings with Sous Chefs and supervisors.
• Authorize overtime controlling.
• Propose promotions.
• Take part in Saudization Management Program.

SAR 30,000 to 40,000 per month inclusive of fixed allowances.

• Graduate of Culinary or Hospitality course or any diploma in professional cookery specializing in Bakery & Pastry.
• C&G or equivalent / HACCP and Food Safety Certification
• Proven experience as Head Chef in the Cold kitchen.
• Exceptional proven ability of kitchen management.
• Capacity in allocating tasks and monitoring progress.
• Outstanding communication, interpersonal and leadership skills.
• Ability to multitask.
• Ability to work efficiently under pressure.
• Up to date with culinary trends and optimized kitchen processes.
• Good understanding of useful computer programs (MS Office – Word, Excel, Power Point & Outlook).
• Credentials in health and safety training – HACCP.
• Knowledge about labour minutes.
• Excellent time management skills.
• Knowledge of Airline Catering is a plus but not necessary.
• Ability to construct menus with new or existing culinary creations ensuring the variety of requirements.
