Job Description
- Assists other members of the kitchen brigade in ensuring that all day-to-day operational matters are handled on time and guest expectations are met.
- Ensures utensils preparation and presentation in relevant food production area conform to the requisite standards.
- Ensures that utensils are stored, prepared, and secured hygienically and safely.
- Maintains standards of hygiene and cleanliness in all kitchen and related areas.
- Ensures that mise-en-place and preparation procedures are correctly followed.
- Supervises the duties of all stewarding employees.
- Supervises the consumption of all chemicals/cleaning supplies on a daily basis.
- Maintains equipment, such as dishwashers, ovens, and refrigerators in good working condition.
- Ensures that the stewarding department meets all health and safety regulations.
- Implements cleaning and sanitation procedures without exception.
- Coordinates with culinary and service team to ensure smooth operations.
- Controls and documents all outgoing equipment and ensures proper receiving upon return.
- Prepares reports on daily cleaning checklist for review.
Qualifications
2 years experience in stewarding/culinary in a luxury hotel.
