Job description / Role

Employment: Full Time

- Carry out costing of all menus and services provided by the Department according to mark up policy and assist the Officer-SMCS in the submission of catering Tenders - quotation.
- Assist the Senior Manager Catering Support Services to establish an effective Food & Beverage control system by:

* Observing current practices and procedures and suggest changes wherever required
* Designing information gathering forms, cost registers, and methods, etc. and act in order to keep the operation functioning smoothly and profitably.

- Maintain & authorise all Masters, Costing & Prices in Tamween Costing System.
- General Master - Item, UOM, Grouping, Yield etc.
- Airline Master - Airline, Aircraft, Class, Configuration etc.
- Route Master – Station, Sector Group
- Meal Master – Meal codes, Normal Meals, SPML etc.
- Recipe & Menu costing & Menu Advise, Menu Cycles, Menu amendments, Meal amendments etc
- Airline Dry Stores Price List, Adhoc Price List, Standard Uplifts,
- Airline Services Charge
- Check & verify all bank recipes and the costs reflected on the recipe records for accuracy.
- Prepare Menu Quotation-Cycle validity & expiry checklist for all Airlines quotation & renew all quotation in advance before expiry.
- Liaise with all airline customers directly and correspond and attend to all queries
- Verify, check and approve all pricelist - menu advise fed in the Tamween system for correctness and accurate billing for airlines.
- Review current-Existing prices from time to time and prepare profitability reports for renewal of quotation.
- Monitoring of all airlines menu implementations. From the receipt of the menus from client up to the implementation by liaising with other Sections within the Department.
- Organizing all airline menu presentation & liaising with the kitchen - CT Stores for all requirements.
- Establish Airline Service and Handling charges - Outdoor catering and other functions service charges providing necessary information and analysis.
- Analyzing In-flight out station catering tenders with comparison & Cross checking of cost with all the outstation caterers & providing the SMCS with all the necessary information.
- Checking Prepared menu grid sheet - galley info. Sheet for the Airline as per their requirement.
- Cross checking with the finance Department about the Invoices prepared to Adhoc Private Flights to ensure proper pricing has been done as per directives issued from the F&B dept.
- Assisting Officer-SMCS during Airline Audit queries and providing all required information as per the audit requirement.
- Giving regular inputs & informing the higher management regarding all matters relating to cost issues of the catering department.
- Prepare MIS Section monthly cost & pricing reports and all other reports as required and forward to SMCS.
- Awareness of set guidelines of ISO 22000:2005, ISO 9001:2000 and adhere to all the guidelines and Hygiene standards of CBU at all the time.
- Attending meetings, Inter-Section and departmental meetings.
- Deputise Officer Catering Support Services in his absence.
- Any other duties as directed by the Senior Officer - Senior Manager Catering Support Services.

Requirements

- Bachelor degree with 2 Years in Food & Beverage Pricing & Cost analysis experience preferable in in-flight Catering / Hotel Industry.
- Or Two years college Diploma in related discipline with 6 Years in Food & Beverage Pricing & Cost analysis experience preferable in in-flight Catering or Hotel Industry.
