Junior Sous Chef - Qatar Aviation Services - Doha

You will be responsible for the day to day operation of the Lounge kitchen. Leads and inspires the kitchen brigade to provide exceptional levels of culinary standards in accordance with menu specifications. The post holder has to ensure that the menus presented to the Lounge guests are of the highest calibre with excellent presentation, hygienically prepared under safe food standards creating the highest culinary experience for our guests. Supports the management team to devise new menus and service offerings and to introduce innovation to the Lounge service offer in addition to ensuring targets are met with food and labour costs.

You are responsible for production and service of Lounge menu offer. You will ensure that all food items produced by the kitchen staff are as per HACCP (Hazard Analysis and Critical Control Points) standards and follow QAS specifications hence delivering food of highest standards. Plan and supervise the operations of junior chefs to ensure smooth lounge operations. Forecasts menu requirements for upcoming cycles together with stores to ensure availability of materials and avoid any possible wastage due to excess stocks. Receive all production and prepare as per SOP’s for distribution to locations.

You will also be responsible for conducting staff briefings at the beginning and end of each shift, for quantity and quality of production and final service, planning kitchen duty roster.

You are expected to take decisive decisions and direct staff accordingly. Reconcile the shift requirements, placing requisitions and updating the system at the beginning and end of each shift.

You will establish the department or teams objectives and priorities to align with and support business objectives. Work in a clean, hygienic and methodically manner. Interact with guests to gauge feedback and an understanding of the service being provided, which should be recorded and discussed with lounge management.

Requirements

You will have a Certificate/Diploma in Food and Beverages and high school qualified with relevant, other trade qualifications/Degree in both food preparation and service. Health & Safety certified and experienced in HACCP/ FSA/USDA implementation.

Experience of minimum 4 years of job-related experience and strong work experience in Hotel/Restaurants as Demi Chef De Partie within an international Hotel, Restaurant, and Airport exposure and Aware of latest trends and food techniques.
