Broad Function:

- To assist the Executive Chef/ Executive Sous Chef in planning, implementing, organizing and coordinating the smooth and efficient operation of Kitchen on a daily basis.
- To read and take immediate action on report relating to Kitchen from Executive Chef/ Executive Sous Chef.
- To participate in all the food production areas of the Kitchen, in order to maintain The Fairmont High Standards of Quality.
- Manages and organizes all aspects of food production to the highest professional standards and in accordance to the standard operating procedures as emanated by the Executive Chef.
- Further responsible for proper sanitation in the production areas, adequate stocking, proper storage, intra-department coordination, working and vacation schedules, food sales program, quality control and, together with the cost controller, production cost calculations.
- Acts on issues and concerns in his field of jurisdiction immediately.
- Ensure that the reputation and image of the Food & Beverage outlets of the operation be retained and improved at all times.
- Displays at any time utmost creativity in the sales programmers, flexibility in customer demands and adaptability to the market.
- Formulates clear statements of objectives in order to maintain the excellent reputation in the eyes of the public, the owner, the guests and the staff.
- Develops realistic action plans aimed to introduce new culinary highlights for all outlets of the operation.

Requirements

What you will be doing:

- Is responsible for the proper briefing of the service staff of the hotel with regards to specials, specialties, seasonal offers and promotions.
- Assists the Executive Chef in the planning of sales programs for the hotel's outlets, banquets and conference center.
- Plans menus and implements them as delegated by Executive Chef and implements those following kitchen SOP's.
- Ensure proper scheduling of staff in accordance to the expected work-load and depending on the hotel's occupancy. =
- Ensure proper regular training with the outlets chefs and staff with the objective to maintain and improve the standards of food production at all times.
- Ensure proper handling of equipment, prevents loss and damage to assets and goods.
- Ensures and enforces the highest standards of sanitation and hygiene through daily walk through of outlets.
- Is co-responsible for proper costing of all food items.
- Report daily in logbook submitted to Executive Chef potential situations requiring personal address by Executive Chef.
- Supervises proper receiving procedures as well as proper storage of food and raw materials.
- Accompanies the Executive Chef in market visits in order to ensure proper selection and purchase of food items and in order to get acquainted with the availability.
- Attends the daily kitchen briefing.
- Replaces the Executive Sous Chef during his absences.
- Checks and controls requisitions from store when it is delegated to him.
- Participates in Banquet/ Catering set ups as necessary.
- Assists Executive Chef in supervising the function of all kitchen employees, facilities and cost to ensure maximum Food & Beverage Department profits is achieved.
