Head Butcher

Job description / Role

The head butcher is responsible for the entire butchery section operationsby ensuring overall quality and hygiene standards.

Key Accountabilities
- Supervise meat production, preparation and portioning and minimizes waste through creative recycling
- Enforce compliance of sanitation and hygiene standards through the strict application of the policies and procedures related to cleanliness
- Receive meat products from suppliers, verify their quality, quantity and proper stocking, and allocate to each section a sufficient supply of meat and poultry
- Check all incoming and outgoing meat in terms of quality and quantity and advises Kitchen Chef of any discrepancies
- Ensure all the butchery items and equipment are correctly maintained in accordance with the established standards
- Assess the par level needed for meat products
- Complete the meat cutting sheet and the meat count sheet accurately and on time
- Contributes to the operations' image by suggesting and implementing enhancements when possible

Requirements
