Overview

We are seeking a Sou Chef to join the Executive Community Services Division. The Executive Community Services Division is responsible for providing the highest standards and quality of all types of Hospitality services to Saudi Aramco Corporate & Executive Management and their guests as well as providing Maintenance services for Executive facilities, Executive Houses kingdom wide.

The Sous Chef is a second in chain of command in Culinary Operations, immediately next to Executive Chef. Responsible for all aspects of the kitchen operation, including supervision of kitchen personnel, preparation and serving the food. Completely in-charge of the entire kitchen in the absence of the Executive Chef.

Duties and Responsibilities

You will be required to perform the following:

Reviews menu for House #19, recommends corrections to Executive Chef. Visits other kitchens to check the work in progress.

Checks the quality and quantity of food in preparation.

Inspects preparation of food for seasoning and cooking time and tastes completed dishes to ensure high quality and acceptable standards.

Prepares menu with Executive Chef for Lunch, Dinner and Special functions.

Ensures that necessary raw food stuff, materials, tools and operating supplies are on hand or requisitioned from inventory to prepare meals according to the established menu table of allowances.

Schedules preparation of food to meet regular meal hours, assigns specific tasks to subordinates to ensure compliance with menu.

Determines the kind and quality of food required daily and prepares requisitions for operating supplies and food ingredients.

Ensures that all food items served in the facilities are properly presented according to standards and practices of Executive Services Section.

Inspects food handlers prior to start of shift to ascertain that employees' uniforms are clean, presentable and comply with established sanitation standards.

Arranges, together with the Executive Chef, necessary repair of equipment and collaborates with him in recommending acquisition of additional or replacement equipment.

Ensures that assigned personnel perform related duties as required.

Explains to the Chef de-Parties, Banquet Coordinators and Senior Cooks what to bake; what recipes to use; ensures labor for every section of the kitchens and provides required supplies of all kinds.

Requirements

Minimum Requirements
- Associate degree from a Culinary school.
- Experience required: Ten years in 5 Star-Hotel, Catering, Banquet Institutions. And at least five years as Sous-Chef in a leading restaurant.
- Ability to communicate in English to the point of receiving complaints, suggestions and/or comments regarding food served.
- Thorough knowledge of sanitation requirements, quality standards and cooking techniques, operation of kitchen equipment, safety standards and other activities related to assigned work.
- You will have vast knowledge of different cuisines such as: Italian, Indian Mexican and Arabic kitchen.
- It is necessary to have Food Safety training certificate.
