Assistant Cost Controller

Job description / Role

Key tasks
-To assist the Cost Controller in supervising the daily receiving and store keeping activities
-To study, analyze and report on all variances pertaining to costs and inventory management
-To manage the hotel monthly inventory process in the strict respect of the hotel policies
-To ensure that the FOCUS control procedures are conducted, adhered to and meet the target objectives
-To control and compute the cost of Food & Beverage.
-To compute the cost of employees meals A&G, A&P, Complimentary Food & Beverage expenses.
-To control the cost of merchandise as per the market list.
-To supervise receiving of Food & Beverage items as well as other store able items as to quality and quantity.
-To conduct physical inventory monthly and quarterly and yearly (F&B, FF&E and SOE)
-To take part in fixing the menu price in the light of the cost of commodities.
-To make proper documentation of market list, receiving report, market list and checking of invoices, etc.
-To revise recipe cost and prepare new recipe as assigned by F&B Department from time to time.
-To investigate the activities of the various outlets.
-To observe standard of food served in staff cafeteria and all outlets.
-To make the inventory report, variance report, Cost report, local purchase report, reconciliation of Food & Beverage statements, dishes sales report, F&B cover report, FFE & SOE
-To supervise the preparation Food/Beverage consumption report.
-To control and supervise outlet F&B and FF&E inventory.
-To perform related duties and special project as assigned.
