Commi Chef 3 - Subject to Contract Award

Job description / Role

Serco Middle East is looking to hire Commi Chef 3 - Subject to Contract Award, who will be responsible to provide Catering Services in accordance with contract specifications and requirements.

Reporting to : Sous Chef

Key accountabilities

Key Job Responsibilities

- Assist catering management to ensure that food production is completed in line with daily menu cycles and in sufficient quantities to meet the projected client attendance numbers
- Ensure that you operate in accordance with all company quality system procedures
- Operate all machinery and equipment in line with OEM instructions
- Responsible for the quality of own daily food preparation and production
- Follow standard recipes at all times and control the use of food rations and ingredients in line with the appropriate recipes
- Minimise food wastage by correct use of HACCP controlled recovery procedures
- Ensure that international standards of food hygiene and HACCP are followed at all times
- Assist catering management to ensure that we meet contract key performance indicators including maintaining client satisfaction levels are 95% or above for catering services
- Assist catering management to ensure the security of all company and client owned assets, report any damages and losses to the executive chef
- Monitor pest control and report any case of detection to executive chef

HSQE Responsibilities and Information Security Responsibilities

- Understanding of personal responsibilities and contribution to achieving compliance with the Integrated Management System requirements, (including but not limited to competence to perform safety critical roles, legal requirements, control measures arisen from environmental impacts and aspects, job safety analysis and information security risk assessment) and the potential consequences of departure from the arrangements in place to deliver the commitments stated in the policies statements above
- To exercise a personal duty of care for their own health, safety and welfare and for those affected by their acts or omissions
- Lead by example and look at ways to conserve energy, water and resources and minimise the generation of waste through personal performance and raise recommendations on how to improve existing processes on this regard within/outside their departments through their Line Manager, Departmental Safety Meetings and any other appropriate available channels
- Protect information assets and data including both electronic and paper based from all threats whether internal, external, deliberate or accidental
- Promote a good HSQE and Information Security culture among their peers, subcontractors and third parties

Safety Critical Responsibility

- Ensure all cooked food has attained a suitable temperature before serving
- Ensure all prepared foods are stored at correct temperature prior to cooking or serving
- Essential technical and professional skills, knowledge and qualifications

Requirements

Knowledge

- Good verbal and written English language
- Basic Food Hygiene certificate
- Currently hold a valid Fit to Handle Food Certificate

Skills

- Good interpersonal skills / client facing
- Ability to communicate with team members
- Ability to multi task
- Ability to work with minimal supervision
- Ability to react to changing priorities, high workloads and achieve time sensitive requests at short notice

Experience

- Minimum of 2 years catering experience
- Basic knowledge of HACCP

Additional / special features of the role

- The job holder will work mostly in an office environment with normal working hours as per company policy. Infrequent travel is required to support continuous development of programmes and services through benchmarking activities.
- Ensure compliance with the Serco Management System and all relevant business processes, procedures and work instructions to deliver all work with appropriate quality and governance standards
