Commis 2

Job description / Role

The Commis 2 is responsible for the preparation of menu items in his/her assigned kitchen while maintaining a high level of food quality. She/he follows the menu, recipe formats and directions of the Chef de Cuisine, and ensures that safety and hygiene regulations are adhered to.

General Responsibilities Include:
- Maintains the sanitation policies (HACCP) as required by the regional governing body and as instructed by the Hygiene Manager
- Ensures an organized outlet; adheres to ordering procedures, store room policies and cleaning cycles; gives suggestions on process improvement
- Displays an innovative and enquiring attitude
- Continuously strives for product enhancement and quality improvement
- Creates culinary experiences with the finest ingredients considering the seasonal availability of produce
- Uses the right tools to deliver and maintain quality standards

Requirements

- Completed an apprenticeship in the culinary department or holds a culinary diploma
- Needs to have a minimum of two to four years progressive experience in a five star environment, preferably one to two years experience in a similar position
- Licenses or Certificates: Ideally holds intermediate food hygiene certification
- Good English communication skills
- Knowledge of basic food hygiene practices
- Quality focused and time conscious, displaying a sense of urgency
- Grooming: All colleagues must maintain a neat, and well groomed appearance (specific standards will be provided)
