Cost Controller - F&B outlet / Retail Background / Central Production Kitchen

Job description / Role

Our Client is an Investment Company, that holds several franchise businesses in Dubai. You will manage the cost control for the central kitchen facility.

• Co-ordinate with the production team to implement requisite controls, policies and procedures.
• Accounting and book-keeping of daily transactions in Central Kitchen.
• Ensure accurate record-keeping of the entire production facility with respect to sales, purchases, expenses.
• Reconcile accounts receivable and accounts payable ledgers with customer and supplier statements respectively, including circulating account statements to customers and suppliers, as requested.
• Suggest and recommend appropriate course of action for controlling all costs, including packaging costs, minimizing wastage, kitchen supplies, etc.
• On a daily basis monitor that cost is correctly calculated as per recipes. Thorough review of food & beverage costing.
• Calculate and monitor inventory variances based on the physical stock and system stock quantities.
• Ensure costing is correctly calculated and posted in system and monitor the food & beverage cost levels. Any deviations, example, price increases or high wastage should be immediately brought to the attention of the management.
• Prepare P&L at the end of every month and review and provide explanation between actual and budgeted performance.
• Prepare and share daily reports to Corporate Finance Team with respect to F&B sales and costs.

Requirements

The ideal candidate will come from an F&B / Retail Background, be experienced in cost control of F&B Outlets / Operations.
