Swissotel Al Ghurair & Swissotel Living Al Ghurair Hotel is a 620-room-and-suite upper upscale property. Catering for both business and leisure clientele. The hotel is located in Deira in the heart of Dubai and within easy reach of major tourist landmarks, leisure destinations and city services. It is linked to the Al Ghurair Shopping Centre, only 3 stops away on the Dubai Metro from the Dubai World Trade Centre and a 10 minute drive from Dubai International Airport.

As a Demi Chef De Partie in Cold Kitchen, you are responsible for the quality and standard of the food served as well as the theoretical and practical training programme of the commis and trainee.

What you will be doing:

- Ensure a behavior and personal appearance to be always geared to the objective of being an example to all other colleagues within the hotel.
- Responsible for correct handling and basic maintenance of equipment machinery and tools in the preparation kitchen.
- Responsible for the proper care and handling of all food items in the preparation kitchen.
- Responsible for the proper care, handling and utilization of all trimming leftovers and waste products such as vegetables, potatoes, bones, skin, fat, etc as per manual.
- Responsible for the work performance and deficiency of all team members under your supervision.
- Conscientious in portioning as per established guidelines.
- Make and check the store requisitions well in advance to allow adequate defrosting time for imported meats, fish, seafood, the cooperation of the Chef de Parties is essential in this matter.
- Check daily orders for all satellite kitchens.
- Give special attention regarding hygiene and sanitation since raw products are handled long before actual consumption.
- Assure orderly handling of different food items like vegetables, potatoes, fish, seafood, lamb and other meat products, never cut fish on butcher block. Never cut meat on the same carving board for fish. Vegetables separate when sorting.
- Build up stock of food items when food cost allows.
- Pay special attention on the proper sorting of food items (trimmed separate from untrimmed). Ready portions, trimmings and bones to be labeled when necessary and vacuum packed.
- Supervise cleaning of preparation kitchen. Refer to kitchen manual regarding cleaning specifications.
- Cooperated and delegate work properly. These are essential for the smooth operations of the kitchen.
- Issue from store only by requisition.
- Responsible for daily inter kitchen and production transfer report.
- To obey all house rules and to also assist in the enforcing of them, he must conduct himself in such a manner as to encourage fellow team members to do likewise.

Requirements

Your experience and skills include:

- Experience of 2 or 3 years in the position in the hospitality industry is a strong asset
- Strong interpersonal and problem solving abilities
- Highly responsible & reliable
- Ability to work well under pressure in a fast paced environment
- Ability to work cohesively as part of a team
- Ability to focus attention on guest needs, remaining calm and courteous at all times

Physical Aspects of Position (include but are not limited to):

- Constant standing and walking throughout shift
- Frequent lifting and carrying up to 20 lbs
- Occasional kneeling, pushing, pulling, lifting
- Occasional ascending or descending ladders, stairs and ramps

Visa Requirements:

Please note that you must be eligible to live and work in Dubai. Swissotel Al Ghurair & Swissotel Living Al Ghurair will cover visa costs and flights for selected candidates from place of origin.
