What you will be doing:
- Manages all aspects of Hygiene & Food Safety with co-ordination between all the kitchens, purchasing & engineering within Novotel & Ibis Dubai, to ensure smooth functioning, employee satisfaction & required levels of HACCP implementation in line with Company & Local Dubai Municipality Policies & Regulations
- Responsible for implementation & co-ordination of all Hygiene & Food Safety Training Programmes as per Municipality Regulations
- Responsible for the monitoring of our processes to ensure compliance & administrative upkeep of records pertaining to achieving & maintaining Environmental Certification(Earth Check/ISO 140001/Planet21)
- Enhances guest satisfaction by ensuring high standards of food safety & hygiene in food operations
- Develops strong relationships with Dubai Municipality Health Officers to facilitate information flow regarding regulatory compliance in all matters related to food safety & hygiene
- Responsible for the administration, operation & coordination of Hygiene & Food Safety related matters
- Responsible for guiding the Department Heads in the implementation & maintenance of the establishment HACCP standards in accordance with Hotel Policies & Regulatory Requirements
- Responsible for ensuring compliance with Local Legislation in terms of Hygiene & Food Safety
- Responsible to coordinate with Dept. Heads regarding matters related to Environmental Requirements
- Responsible for establishing & maintaining high sanitation standards in food preparation areas
- To set standards for processes in line with company policies
- Establishes & implements all the HACCP policies in all the kitchens & stewarding areas
- To facilitate & formulate action plans for BQT functions, catering & internal special projects
- Monitors Food Delivery ,Processing & end Product Systems for HACCP Compliance
- To ensure Dubai Municipality Food control Section Regulations are adhered to in detail & attend inspections conducted & ensure corrective actions are taken
- Ensure that all operational facilities pertaining to hygiene & food safety are used to its appropriate function & maintenance issues raised & followed up with Engineering Departments
- To ensure Internal Audits on Food Safety & Hygiene are conducted & corrective actions taken accordingly in agreement with Management
- Maintain /Direct & Update All Administrative Records & Documentation pertaining to Environmental Management & Objectives(Earth Check/ISO 14001/Planet21)
- Maintains & Ensures HACCP Documentation Control, Audit Results & Corrective Actions Required & Information flow between departments.
- Carries out & records monthly checks to ensure compliance. Sets up an action plan based on the hygiene analysis results and tracks implementation
- Maintain Training Log of all Heartist who had done/scheduled to be trained on all municipality related training programmes
- Ensures the PIC Programme of Dubai Municipality is effective in the operations
- Brings to the attention of Management any process where our care of the Environment is put at risk by our practices

Requirements

Your experience and skills include:
- Post Graduate Degree in Microbiology with Professional Training in HACCP Implementation
- At least 5 years' experience in the sector and impeccable knowledge food safety & hygiene regulations and management
- Fluent in English
- Team spirit
- Guest oriented, outgoing and service minded
- Responsive
- Ability to perform under pressure
- Well organised
- Decisive - Autonomous - Entrepreneurial and good commercial sense
- Creative and innovative
- Good level of general culture
- Excellent presentation skills
