Jr. Sous Chef- Pastry

To coordinate and ensure the smooth and efficient flow of the culinary operations in Pastry Kitchen. Maintain and enhance the food products through a creative menu development and presentation. Always act in a professional manner and promote the company's Mission, Vision and Values through example. Strive to exceed guest expectation and take the culinary team going from good to great.

What you will be doing:
- Conduct daily shift briefings to pastry kitchen colleagues
- Promote a Fun/ Professional and Disciplined work environment
- Lead by example using Fairmont's: Mission, Vision & Values
- Support/Coach/Lead & motivate pastry kitchen colleagues
- Actively share ideas, opinions & suggestions in weekly Sous Chef meeting
- Prepare duty roster with the Pastry Chef
- Liaise on daily with Outlet Chefs to keep open lines of communication & guest feedback
- Along with the Pastry Chef, is responsible for all menu presentation
- Ensures that all Pastry prep, production & decoration are as per business requirement for all outlets in timely manner.
- Liaise with all pastry production areas for their daily food order and summit to Pastry Chef / purchaser to prepare Market list in timely manner
- Be aware of daily revenue report & assist the pastry Chef in maintaining food & labor cost within Maintain cleanliness and proper rotation of product in Pastry chillers & freezers
- Maintain proper distribution & adjustments to culinary BEOs.

Requirements

Your experience and skills include:
- Previous experience in a 5 star luxury hotel environment
- Strong understanding of HACCP
- Have a strong working knowledge of International Cuisine.
- Experience working in Middle East or Asia an asset
- Enthusiastic and with an outgoing personality who is very guest driven
