• Minimum 5 years of professional sushi experience in a high-end or fine-dining setting
• Expertise in traditional and modern sushi preparation (nigiri, sashimi, maki, omakase)
• Exceptional knife skills, plating precision, and knowledge of top-grade ingredients
• Strong attention to detail
• A calm, focused attitude under pressure and a drive for continuous improvement
• Japanese language skills are a plus, but not essential
• Attention to detail, hygiene, and food safety standards
