Head Chef - Bakery & Pastry – In-flight Catering - Service Provider – Saudi Arabia (Riyadh/Jeddah)

Our client is a market leader in delivering first class Catering Services across multiple industries, specialising in in-flight catering for the aviation sector. They are currently seeking a Head Chef Bakery and Pastry to join their team in Saudi Arabia for positions in both Jeddah and Riyadh.

The Head Chef - Plans, organizes, directs and controls the production activities and staff within the area of responsibilities in order to achieve the Company set goals and objectives.

Roles and Responsibilities:
• Participate in planning/meeting, make suggestions, take charge of production and present the bakery products at food presentations.
• Suggest and develop new products. Visit food fair and Food Presentations International.
• Responsible for the daily production. Checkup lists with signatures.
• Ensure that the production is carried out according to Catering Orders and the production is up to the highest airline standard.
• Evaluate and establish specifications for all raw materials and ensure they are being utilized according to established procedure and intended purposes.
• Responsible for the establishment and maintenance of recipe book in Pastry Shop and Bakery in order to ensure standardization, and high quality of all our products.
• Responsible for cost and time studies on all items produced.
• Suggest and participate in the development of new and better production procedures.
• Work close with the production planner
• Take charge of production planning on nightshift when production planner is on vacation. Advance scheduling of vacation.
• Monthly meeting with all Dept. staff, Training, ISO update, etc.
• Maintain ISO standard.

Salary:
SAR 30,000 to 40,000 per month inclusive of fixed allowances.

Requirements

Requirements:
• Graduate of Culinary or Hospitality course or any diploma in professional cookery specializing in Bakery & Pastry.
• C&G or equivalent / HACCP and Food Safety Certification
• Experience in the position or similar in either: Inflight Catering/Cruise ships/Outside catering companies
• Ability to work efficiently under pressure.
• Up to date with culinary trends and optimized kitchen processes.
• Good understanding of useful computer programs (MS Office – Word, Excel, Power Point & Outlook).
• Knowledge about labour minutes.
• Excellent time management skills.
• Knowledge of Airline Catering is a plus but not necessary.
• Ability to construct menus with new or existing culinary creations ensuring the variety of requirements.
• Proven ability to Control and directing the food preparation process and any other relative activities.
