Assistant Food & Beverage Manager

What you will be doing:

Reporting to the Director of Operations, responsibilities and essential job functions include but are not limited to the following:

- Lead and manage the Outlets team in all aspects of the department and ensure service standards are followed
- Interview, select, train, counsel, discipline and reward restaurant staff for the efficient operation of the outlets. Organize and conduct daily pre-shift and monthly departmental meetings communicating pertinent information to colleagues. Schedule and direct staff in their work assignments. Train and direct staff in all food and beverage operations according to Fairmont Standards. Communicate effectively, both verbally and in writing to provide clear direction to the staff. Observe colleague performance, praise as well as encourage improvement when necessary with effective and consistent performance management.
- Interact positively with customers, promoting hotel facilities and services. Resolve problems to the satisfaction of involved parties. Maintain communication with all departments to ensure customer services are met.
- Maintain and analyze the profitability of outlets to support overall hotel operation. Control payroll and equipment costs. Ensure par stock levels are maintained by calculating inventory, ordering and retrieving supplies. Operate the restaurant in accordance with Fairmont Hotels and Resorts operational procedures. Analyze the cost-effectiveness of all aspects of the operation. Develop and implement cost-saving and profit-enhancing measures. Create promotions and recommend price adjustments based on market trends, quarterly competitive analysis and product sales mix.
- Continuously move throughout the restaurants and kitchen areas to visually monitor and take action to ensure food quality and service standards are met. Give guidance toward improvement and make necessary adjustments for consistency. Field customer complaints by conducting thorough research of the situation in order to choose the most effective solution. Make decisions and take action based on previous experience and good judgment, sometimes revising procedures to accommodate unusual situations.
- Utilize prescribed cash handling procedures to accurately charge customers, create forecast and revenue reports and write correspondence.
- Establish and implement 5-star service levels: Create and implement colleague-training initiatives, Implementing service standards
- Creating and implementing a preventative cleaning and maintenance program: Work together with the culinary & stewarding team to ensure that all food service meets or exceeds guest expectations and to promote teamwork as a strong component of the daily service culture. Control stocks for daily use in the restaurant to ensure service requirements are met
- Creation and implementation of guest preference programs.
- Monitoring and continued development of Food & Beverage control:

Control and analyzes the level of:
- Quality of Service
- Guest Satisfaction
- Employees Satisfaction
- Operating equipment
- Grooming Standards

Conduct under the guidance of the F&B Director on:
- Training,
- Promotional Plan,
- Interviewing, Employee Orientation,
- Job Performance and Corrective Action
- Participate in service as necessary in accordance with restaurant needs
- Develop a marketing plan to ensure the restaurant is capturing the maximum amount of in house guests as well as drawing customers from outside the hotel. Create and innovate new ideas and promotions to generate revenue. Participate in local events to foster positive relationships with other members of the community.
- Review all group resumes and BEOs in order to ensure successful completion of all IRD responsibilities (as outlined in the resumes or BEOs)
- Supervises and assists in service for VIPs/ SA etc.
- Maintain communication between IRD and all relevant departments
- Check tray and table setups to ensure departmental standards are always maintained
- Oversee Refreshment Centre operation, guest room checkouts, remove bars etc.
- Check VIP list and follow up on all deliveries
- Ensure the payroll of all colleagues is submitted and timesheets are accurate in a timely manner
- Other assigned duties


Your experience and skills include:
- Previous Food and Beverage leadership experience required
- Previous Point of Sale System experience required
- Computer literate in Microsoft Window applications required
- University/College degree in a related discipline preferred
- Excellent communication and organizational skills
- Strong interpersonal and problem-solving abilities
- Highly responsible & reliable
- Ability to work well under pressure in a fast-paced environment
- Ability to work cohesively as part of a team
- Ability to focus attention on guest needs, remaining calm and courteous at all times
