Job Summary
Roxy Cinema is part of Dubai Holding Entertainment and have an exciting career opportunity. We are looking to hire an Executive Sous Chef – The role reports to Manager – Operations. The Executive Sous Chef is responsible for the overseeing of all Culinary Operations. Develop menu, standardize recipes and maintain an inventory of ingredients, while striving to achieve cost-efficiency for the Leisure and Entertainment group. Also to oversee that the Culinary Team maintains a high food quality and sanitation standards.

Key Accountabilities (Includes, but not limited to the following)
• Oversee Cinema F&B Culinary and Service Operations through providing leadership to direct reports ensuring that service steps & standards are constantly maintained to deliver an exceptional guest experience.
• To represent & promote Roxy Cinemas in a positive manner in order to maintain a professional brand image.
• Liaise with management Team to further develop F&B operations and provide guidance with any food safety issues.
• Conduct regular inspections in the Kitchen to monitor maintenance and hygiene standards.
• Manage and oversee the day-to-day operations of all aspects related to F&B of Roxy Cinemas
• Lead the Culinary Team
• Menu development and engineering across the L&E portfolio (includes, Groups and Events / Birthdays / Operational Menus etc.)
• Determine Culinary standards on recipes and presentation guidelines and ensuring consistency across all assets
• Develop and implement guidelines and control procedures for purchasing and receiving areas
• Manage Culinary controllable expenses including food costs/supplies etc
• Prepare and cook foods of all types, either on a regular basis or for special Guests or functions
• Follow, implement and train on HACCP procedures
• Approves staff scheduling and in training of all positions and external contractors
• Completes any other tasks as required by Management.
• Review Cinema Rosters ensuring fair and balanced shift schedule appropriate the business needs.
• To listen actively to our guest feedback, requests and concerns to take action in an ethical, effective and timely manner to exceed expectations.
• Analyse results on monthly basis to identify any trends and provide action plan for improvements where required.
• To provide guidance and support of all events and in the preparations of the facility space for special functions, themed evenings, and private screenings.
• Lead Cinema H&S committee to ensure issues are identified, investigated and managed in an appropriately
• Provide support and guidance to the wider Attractions business

Requirements

Minimum qualifications
• Formal Qualification at tertiary level to degree standard in Hotel / Restaurant Management or minimum of 2-year degree from an accredited university in Culinary Arts or related discipline.
• PIC 3 Certified (Mandatory)
• HACCP Certified (Preferred)

Minimum experience
• 5-8 years of relevant experience in Cinema Industry

Skillset
• Knowledge of all F&B Standard operating procedures, quality presentation and products
• Proficient in multi-property operations and cuisines
• Knowledge of food trends and special seasonal foods
• Knowledge of new techniques and machinery
• Ability to assess quality control and adherence to service standards
