Job description / Role

Employment: Full Time

Supervising your assigned kitchen employees, facilities and cost to ensure the maximum food and beverage departmental profit is achieved

Controlling and analysing the following on an ongoing basis, ensuring optimum performance:
- Business operations in-line with CUPAGAHWA standards
- Receiving, storing, producing and presenting food to the highest standards
- Cleanliness, sanitation and hygiene
- Operating and food costs, with strict portion control applied, keeping wastage to a minimum and utilising food surplus

- Establishing and maintaining good employee relations to promote teamwork
- Checking function sheets, ensuring that all food items for special functions are prepared on time, while meeting quality and quantity standards
- Ensuring that CUPAGAHWA cost and policies and procedures are followed
- Maintaining up-to-date recipe files that are properly displayed
- Checking that daily production lists are always up to date
- Training staff properly on a regular basis, evaluating their performance and offering them guidance every step of the way, in addition to introducing new employees
- Ensuring all staff know how to use and clean all the machinery, equipment and utensils
- Ensuring an adequate supply of raw material by checking stock levels daily and preparing details for requisitions of supplies
- Ensuring an inventory for all food items is in your assigned kitchens
- Completing accurate inter-cafe transfers on time
- Inspecting assigned kitchen areas, food storerooms and equipment on a daily basis for cleanliness and hygiene
- Ensuring that the kitchen, including machines, furniture, equipment and utensils are clean and in working condition at all times, promoting a hygienic and safe environment
- Full familiarity with all local Food Hygiene and HACCP guidelines, as per county regulation
- Performing duties common to all Sous Chefs, as may be assigned by the Executive Chef
- Delegating a responsible person to ensure the smooth running of the kitchens during any absence, ensuring they are fully briefed
- Helping Store managers to effectively handle kitchen grievances
- Interacting with Guests and handling their complaints, where necessary
- Cross-checking the Kitchen Chef’s checklist
- Maintaining a hands-on approach in all outlets where you have been allocated by the Executive Chef
- Monitoring inventory levels, ensuring breakages are kept to a minimum
- Overseeing the maintenance, serviceability and cleaning of all back of house
- Ensuring that expiry policy is implemented and strictly followed, managing inventory levels to minimise wastage and mark-outs
- Identifying slow-moving items and communicating these to the Managers in order to introduce Daily Special Promotions
- Implementing and overseeing a program for the routine maintenance of all kitchen equipment, ensuring its serviceability and longevity
- Conducting BOH audits as per company standard, forwarding results to the Manager

Requirements

Academic & Trades Qualifications
- Team player and leader. Professional, quality driven, customer focused hospitality business manager. Willing to be an ambassador of BINGHATTI HOSPITALITY culture
- Food specialist with a proven track record within their respected industry.
- At least 5 years’ experience working in Hospitality including handling similar positions

Education Requirements:
Graduate/ Diploma on Culinary courses

Working Experience & Skills
- 3 to 5 years Minimum Head Chef role in multi-site, branded high-volume catering business. Preferably within international coffee shop brand/ multi cuisine brand
- Polite and easy to communicate with
- Displaying emotional maturity and sensitivity when dealing with others
- Operating with integrity and objectivity at all times
- Demonstrating high levels of organisation and good planning skills
- Ability to work in a fast-paced environment
- A team player
- Displaying first-class people skills with the ability to communicate effectively across a multi-national, multi-cultural environment
- Should be able to work under pressure
